• Things I am loving | Part 2

    Lately I have really enjoyed cooking, baking and just being content with doing nothing. Being busy at work and living a fast paced live, you really get lost and caught up in things.
    Banana and dark chocolate muffins recipe
    It is nice to just slow down. One of the biggest things I realised in 2015 is that it is okay to enjoy the simple, quiet moments in life - lying on the grass under trees while doing absolutely nothing, baking for the fun of it, staying in with the person you love, I could go on and on.

    I recently baked these dark chocolate and banana muffins and decided to share it on my blog.
    3 X medium bananas (mashed with a fork)
    1 X cup of flour
    2 X medium eggs
    120ml oil or melted butter
    150ml brown sugar
    6 blocks of lindt 80% dark chocolate chopped up

    Add all the ingredients to a mixing bowl and gently mix ingredients together. Don't however over mix the batter if you want light muffins. Add the mixture to a muffin tray and bake at 170 degrees Celsius for 30 - 40 minus until golden brown. Including the preparation time you can enjoy freshly baked muffins in under an hour.

    6. Hi Charlene, I baked this recipe, but not sure if it came out right. Did you use cake wheat flour or self raising flour? And how many muffins did it make, 12?
